Predictive microbiology uses mathematical models to define growth kinetics of food microorganisms and to predict microbial behavior under various environmental conditions. It is used to assess the risks of food processing and handling from farm to table; and, to implement control measures to protect the microbiological quality of foods, important for both food safety and product quality.
