  • Information Proceso de empaque de productos procesados en el cual se elimina el aire y se forma un vacío. Se puede introducir dióxido de carbono o nitrógeno en forma de gas en el empaque para ayudar a eliminar el oxígeno. La eliminación del aire retarda el crecimiento de bacterias aeróbicas.
